Ingredients

  • Large potatoes - 2
  • Ground beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Red bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Cheddar cheese - 100 grams, grated
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and scrub the potatoes thoroughly, then prick them with a fork in several places.
  3. Wrap each potato in aluminum foil and bake in the preheated oven for about 45-50 minutes, or until tender.
  4. While the potatoes are baking, heat olive oil in a skillet over medium heat.
  5. Add the chopped onion and garlic to the skillet, sautéing until the onion is translucent.
  6. Add the ground beef to the skillet, breaking it up with a spoon, and cook until browned.
  7. Stir in the diced red bell pepper and tomato, cooking for an additional 5 minutes.
  8. Season the mixture with salt, black pepper, paprika, and cumin, stirring well to combine.
  9. Once the potatoes are done baking, remove them from the oven and carefully unwrap them.
  10. Cut a lengthwise slit in each potato and gently fluff the inside with a fork to create space for the filling.
  11. Spoon the beef mixture generously into each potato, then top with grated cheddar cheese.
  12. Return the stuffed potatoes to the oven for another 5-10 minutes until the cheese is melted and bubbly.
  13. Remove from the oven, garnish with chopped parsley, and serve immediately.
