- Cheddar cheese - 100 grams, grated
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Wash and scrub the potatoes thoroughly, then prick them with a fork in several places.
- Wrap each potato in aluminum foil and bake in the preheated oven for about 45-50 minutes, or until tender.
- While the potatoes are baking, heat olive oil in a skillet over medium heat.
- Add the chopped onion and garlic to the skillet, sautéing until the onion is translucent.
- Add the ground beef to the skillet, breaking it up with a spoon, and cook until browned.
- Stir in the diced red bell pepper and tomato, cooking for an additional 5 minutes.
- Season the mixture with salt, black pepper, paprika, and cumin, stirring well to combine.
- Once the potatoes are done baking, remove them from the oven and carefully unwrap them.
- Cut a lengthwise slit in each potato and gently fluff the inside with a fork to create space for the filling.
- Spoon the beef mixture generously into each potato, then top with grated cheddar cheese.
- Return the stuffed potatoes to the oven for another 5-10 minutes until the cheese is melted and bubbly.
- Remove from the oven, garnish with chopped parsley, and serve immediately.
