Ingredients

  • Zucchini - 2 medium (about 400g)
  • Ground beef or lamb - 250g
  • Onion - 1 small (about 100g), finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Wash the zucchinis and cut them into thin, noodle-like strips using a spiralizer or a vegetable peeler. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic to the skillet and sauté for another minute until fragrant.
  4. Add the ground beef or lamb to the skillet, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
  5. Stir in the tomato paste, salt, black pepper, and paprika. Cook for an additional 2-3 minutes to combine the flavors.
  6. Add the zucchini noodles to the skillet and toss gently to coat with the meat mixture. Cook for about 5 minutes until the zucchini is tender but still slightly crisp.
  7. Remove from heat and serve hot, garnished with fresh parsley.
