Ingredients
- 2 medium zucchinis (about 300g each)
- 200g ground beef (or lamb)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 medium tomato, diced
- 2 tablespoons olive oil
- 1 teaspoon tomato paste
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 100ml water
Steps
- Preheat the oven to 180°C (350°F).
- Wash the zucchinis and cut off the ends. Carefully hollow them out using a small spoon, leaving about 1 cm of flesh around the edges. Set the zucchini flesh aside.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are soft and translucent.
- Add the ground beef (or lamb) to the skillet, breaking it apart with a wooden spoon. Cook until browned.
- Stir in the diced tomato, tomato paste, paprika, black pepper, and salt. Cook for another 5 minutes until the mixture thickens.
- Chop the reserved zucchini flesh and add it to the meat mixture along with the parsley and dill. Mix well and cook for an additional 3-4 minutes.
- Stuff the hollowed zucchinis with the meat mixture, packing it tightly.
- Place the stuffed zucchinis in a baking dish. Pour the water around the zucchinis to keep them moist while baking.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10 minutes until the zucchinis are tender and the tops are slightly golden.
- Serve warm, garnished with extra chopped herbs if desired.
