Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Ground beef - 200 grams
  • Fresh spinach - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Red pepper flakes - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Egg - 1 (for egg wash)

Steps

  1. In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Knead until smooth, about 5-7 minutes.
  3. Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes or until doubled in size.
  4. In a skillet, heat a little olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent.
  5. Add the ground beef to the skillet and cook until browned. Stir in the tomato paste, red pepper flakes, black pepper, and salt. Mix well and cook for another 2-3 minutes.
  6. Add the fresh spinach to the beef mixture and stir until wilted. Remove from heat and let it cool slightly.
  7. Preheat the oven to 220°C (428°F).
  8. Divide the dough into two equal portions and roll each into an oval shape (about 20 cm long).
  9. Place the beef and spinach mixture along the center of each dough oval, leaving the edges clear.
  10. Fold the edges of the dough over the filling, pinching to seal and create a boat shape.
  11. Beat the egg and brush it over the dough for a golden finish.
  12. Place the pide on a baking sheet and bake for 15-20 minutes or until the crust is golden brown.
  13. Remove from the oven and let it cool slightly before slicing. Serve warm.
