Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Sugar - 5 grams
- Salt - 5 grams
- Olive oil - 15 ml
- Ground beef - 200 grams
- Fresh spinach - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Red pepper flakes - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Egg - 1 (for egg wash)
Steps
- In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
- In a mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Knead until smooth, about 5-7 minutes.
- Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes or until doubled in size.
- In a skillet, heat a little olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent.
- Add the ground beef to the skillet and cook until browned. Stir in the tomato paste, red pepper flakes, black pepper, and salt. Mix well and cook for another 2-3 minutes.
- Add the fresh spinach to the beef mixture and stir until wilted. Remove from heat and let it cool slightly.
- Preheat the oven to 220°C (428°F).
- Divide the dough into two equal portions and roll each into an oval shape (about 20 cm long).
- Place the beef and spinach mixture along the center of each dough oval, leaving the edges clear.
- Fold the edges of the dough over the filling, pinching to seal and create a boat shape.
- Beat the egg and brush it over the dough for a golden finish.
- Place the pide on a baking sheet and bake for 15-20 minutes or until the crust is golden brown.
- Remove from the oven and let it cool slightly before slicing. Serve warm.
