Steps
- In a large bowl, combine the grated zucchini, grated carrot, chopped bell pepper, chopped spinach, crumbled feta cheese, and chopped parsley.
- In a separate bowl, whisk together the eggs, salt, black pepper, cumin, and paprika.
- Pour the egg mixture over the vegetable mixture and stir well to combine.
- Add the flour to the mixture and mix until a thick batter forms.

- Scoop about 1/4 cup of the mixture into the skillet, flattening it slightly to form a patty. Cook for 3-4 minutes on each side until golden brown. Repeat with remaining mixture, adding more oil as needed.
- While the patties are cooking, slice the ciabatta bread in half and toast them lightly.
- Assemble the köy tostu by placing the cooked patty on the bottom half of the ciabatta, then topping it with your choice of fresh toppings like sliced tomatoes, cucumbers, or additional spinach.
- Place the top half of the ciabatta on the burger and serve immediately.
