Ingredients

  • Tomato - 1, diced
  • Spinach - 100 grams, fresh
  • Parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Begin by heating the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chicken thighs to the skillet, season with salt and black pepper, and cook for about 5-6 minutes on each side until golden brown.
  4. Once the chicken is browned, add the diced red bell pepper and tomato to the skillet.
  5. Cover and let it simmer for 15 minutes or until the chicken is cooked through and tender.
  6. In the last 5 minutes of cooking, add the fresh spinach and chopped parsley, stirring until the spinach wilts.
  7. Drizzle with lemon juice before serving.
  8. Serve hot, ideally with whole-grain bread or alongside a fresh salad.
