- Spinach - 100 grams, fresh
- Parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Begin by heating the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the chicken thighs to the skillet, season with salt and black pepper, and cook for about 5-6 minutes on each side until golden brown.
- Once the chicken is browned, add the diced red bell pepper and tomato to the skillet.
- Cover and let it simmer for 15 minutes or until the chicken is cooked through and tender.
- In the last 5 minutes of cooking, add the fresh spinach and chopped parsley, stirring until the spinach wilts.
- Drizzle with lemon juice before serving.
- Serve hot, ideally with whole-grain bread or alongside a fresh salad.
