Ingredients
- Cauliflower - 1 medium head
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Green peas - 100 grams, fresh or frozen
- Tomato - 1 medium, diced
- Vegetable broth - 250 ml
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Remove the leaves from the cauliflower and cut it into florets.
- Pulse the cauliflower florets in a food processor until they resemble rice grains; set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
- Add the diced carrot and bell pepper, cooking for another 5 minutes until softened.
- Stir in the diced tomato and green peas, cooking for an additional 2-3 minutes.
- Add the cauliflower rice to the skillet, stirring well to combine. Pour in the vegetable broth, and season with salt and black pepper.
- Cover the skillet and let it simmer for about 10-12 minutes, or until the cauliflower is tender and has absorbed most of the liquid.
- Remove from heat, fluff the pilav with a fork, and garnish with fresh parsley before serving.
