Ingredients

  • Cauliflower - 1 medium head
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Green peas - 100 grams, fresh or frozen
  • Tomato - 1 medium, diced
  • Vegetable broth - 250 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Remove the leaves from the cauliflower and cut it into florets.
  2. Pulse the cauliflower florets in a food processor until they resemble rice grains; set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
  4. Add the diced carrot and bell pepper, cooking for another 5 minutes until softened.
  5. Stir in the diced tomato and green peas, cooking for an additional 2-3 minutes.
  6. Add the cauliflower rice to the skillet, stirring well to combine. Pour in the vegetable broth, and season with salt and black pepper.
  7. Cover the skillet and let it simmer for about 10-12 minutes, or until the cauliflower is tender and has absorbed most of the liquid.
  8. Remove from heat, fluff the pilav with a fork, and garnish with fresh parsley before serving.
