  • Red lentils - 100 grams
  • Chickpeas - 50 grams (cooked)
  • Bulgar wheat - 50 grams
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 750 ml
  • Olive oil - 2 tablespoons
  • Tomato paste - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until they become translucent.
  2. Add the diced carrot and potato to the pot and cook for another 5 minutes, stirring occasionally.
  3. Stir in the tomato paste, cumin, and paprika, cooking for an additional 2 minutes to enhance the flavors.
  4. Add the red lentils, cooked chickpeas, and bulgar wheat to the pot, then pour in the vegetable broth.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 25-30 minutes, or until the lentils and bulgar are tender.
  6. Season with salt and black pepper to taste.
  7. Serve hot, garnished with fresh parsley.
