- Bulgar wheat - 50 grams
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 750 ml
- Olive oil - 2 tablespoons
- Tomato paste - 1 tablespoon
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until they become translucent.
- Add the diced carrot and potato to the pot and cook for another 5 minutes, stirring occasionally.
- Stir in the tomato paste, cumin, and paprika, cooking for an additional 2 minutes to enhance the flavors.
- Add the red lentils, cooked chickpeas, and bulgar wheat to the pot, then pour in the vegetable broth.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 25-30 minutes, or until the lentils and bulgar are tender.
- Season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
