Ingredients

  • Bulgur - 100 grams
  • Water - 200 milliliters
  • Plain yogurt - 200 grams
  • Cucumber - 50 grams, diced
  • Tomato - 50 grams, diced
  • Green onion - 2 stalks, finely chopped
  • Parsley - 20 grams, finely chopped
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a saucepan, bring 200 ml of water to a boil. Add 100 grams of bulgur and a pinch of salt, then remove from heat, cover, and let it sit for about 15 minutes until the bulgur absorbs the water.
  2. Once the bulgur is cooked and cooled, fluff it with a fork and transfer it to a mixing bowl.
  3. Add the diced cucumber, diced tomato, green onion, and chopped parsley to the bulgur.
  4. In a small bowl, whisk together the yogurt, olive oil, lemon juice, salt, and black pepper until smooth.
  5. Pour the yogurt dressing over the bulgur mixture and gently combine until everything is well coated.
  6. Serve immediately or chill in the refrigerator for 10 minutes before serving for a refreshing touch.
