- Bulgur - 100 grams
- Water - 200 milliliters
- Plain yogurt - 200 grams
- Cucumber - 50 grams, diced
- Tomato - 50 grams, diced
- Green onion - 2 stalks, finely chopped
- Parsley - 20 grams, finely chopped
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a saucepan, bring 200 ml of water to a boil. Add 100 grams of bulgur and a pinch of salt, then remove from heat, cover, and let it sit for about 15 minutes until the bulgur absorbs the water.
- Once the bulgur is cooked and cooled, fluff it with a fork and transfer it to a mixing bowl.
- Add the diced cucumber, diced tomato, green onion, and chopped parsley to the bulgur.
- In a small bowl, whisk together the yogurt, olive oil, lemon juice, salt, and black pepper until smooth.
- Pour the yogurt dressing over the bulgur mixture and gently combine until everything is well coated.
- Serve immediately or chill in the refrigerator for 10 minutes before serving for a refreshing touch.
