- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 medium, diced
- Red onion - 50 grams, finely chopped
- Fresh parsley - 30 grams, chopped
- Fresh mint - 20 grams, chopped
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- In a bowl, combine bulgur and boiling water, cover, and let it sit for about 15 minutes until the bulgur absorbs the water and becomes tender.
- Fluff the bulgur with a fork and allow it to cool slightly.
- In a large mixing bowl, combine the chopped arugula, halved cherry tomatoes, diced cucumber, finely chopped red onion, chopped parsley, and chopped mint.
- Add the fluffed bulgur to the salad mixture.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Pour the dressing over the salad and gently toss everything together until well combined.
