Ingredients

  • Bulgur - 100 grams
  • Boiling water - 200 milliliters
  • Roka (arugula) - 100 grams, washed and roughly chopped
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 50 grams, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 20 grams, chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a bowl, combine bulgur and boiling water, cover, and let it sit for about 15 minutes until the bulgur absorbs the water and becomes tender.
  2. Fluff the bulgur with a fork and allow it to cool slightly.
  3. In a large mixing bowl, combine the chopped arugula, halved cherry tomatoes, diced cucumber, finely chopped red onion, chopped parsley, and chopped mint.
  4. Add the fluffed bulgur to the salad mixture.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  6. Pour the dressing over the salad and gently toss everything together until well combined.
  7. Serve immediately or chill for 10 minutes in the refrigerator for enhanced flavors.
