Ingredients
- Zucchini - 200 grams
- Fine bulgur - 50 grams
- Chickpeas (cooked) - 100 grams
- Red bell pepper (finely chopped) - 50 grams
- Green onion (finely chopped) - 2 stalks
- Fresh parsley (finely chopped) - 30 grams
- Egg - 1 large
- All-purpose flour - 30 grams
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for frying
Steps
- Grate the zucchini and place it in a clean kitchen towel, squeezing out the excess moisture.
- In a large bowl, combine the grated zucchini, fine bulgur, cooked chickpeas (mashed slightly), red bell pepper, green onion, and parsley.
- In a separate bowl, beat the egg and add it to the vegetable mixture along with the flour, cumin, salt, and black pepper. Mix until well combined.
- Heat a non-stick skillet over medium heat and add a little olive oil.
- Scoop about 2 tablespoons of the mixture and shape it into a patty, then place it in the skillet. Repeat with the remaining mixture.
- Fry the patties for about 3-4 minutes on each side until golden brown and crispy.
- Remove from the skillet and place on paper towels to drain excess oil. Serve warm.
