Ingredients

  • Zucchini - 200 grams
  • Fine bulgur - 50 grams
  • Chickpeas (cooked) - 100 grams
  • Red bell pepper (finely chopped) - 50 grams
  • Green onion (finely chopped) - 2 stalks
  • Fresh parsley (finely chopped) - 30 grams
  • Egg - 1 large
  • All-purpose flour - 30 grams
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for frying

Steps

  1. Grate the zucchini and place it in a clean kitchen towel, squeezing out the excess moisture.
  2. In a large bowl, combine the grated zucchini, fine bulgur, cooked chickpeas (mashed slightly), red bell pepper, green onion, and parsley.
  3. In a separate bowl, beat the egg and add it to the vegetable mixture along with the flour, cumin, salt, and black pepper. Mix until well combined.
  4. Heat a non-stick skillet over medium heat and add a little olive oil.
  5. Scoop about 2 tablespoons of the mixture and shape it into a patty, then place it in the skillet. Repeat with the remaining mixture.
  6. Fry the patties for about 3-4 minutes on each side until golden brown and crispy.
  7. Remove from the skillet and place on paper towels to drain excess oil. Serve warm.
