Ingredients

  • Large potatoes - 2
  • Fine bulgur - 100 grams
  • Hot water - 150 milliliters
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Red bell pepper - 1/2, diced
  • Green onions - 2, finely chopped
  • Parsley - 30 grams, chopped
  • Mint - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pomegranate molasses - 1 tablespoon (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and prick them with a fork several times. Wrap each potato in aluminum foil and bake for about 45-50 minutes until tender.
  3. While the potatoes are baking, rinse the bulgur under cold water. Place it in a bowl and pour hot water over it. Cover and let it sit for 15-20 minutes until the bulgur absorbs the water and becomes fluffy.
  4. Once the bulgur is ready, fluff it with a fork and add diced tomato, cucumber, red bell pepper, green onions, parsley, and mint.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, black pepper, and pomegranate molasses if using. Pour the dressing over the bulgur mixture and toss well to combine.
  6. When the potatoes are done, remove them from the oven, carefully unwrap, and slice them open lengthwise. Fluff the insides with a fork.
  7. Spoon the kısır mixture generously into each potato, and serve warm.
