Ingredients
- Large potatoes - 2
- Fine bulgur - 100 grams
- Hot water - 150 milliliters
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Red bell pepper - 1/2, diced
- Green onions - 2, finely chopped
- Parsley - 30 grams, chopped
- Mint - 10 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pomegranate molasses - 1 tablespoon (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and prick them with a fork several times. Wrap each potato in aluminum foil and bake for about 45-50 minutes until tender.
- While the potatoes are baking, rinse the bulgur under cold water. Place it in a bowl and pour hot water over it. Cover and let it sit for 15-20 minutes until the bulgur absorbs the water and becomes fluffy.
- Once the bulgur is ready, fluff it with a fork and add diced tomato, cucumber, red bell pepper, green onions, parsley, and mint.
- In a small bowl, whisk together olive oil, lemon juice, salt, black pepper, and pomegranate molasses if using. Pour the dressing over the bulgur mixture and toss well to combine.
- When the potatoes are done, remove them from the oven, carefully unwrap, and slice them open lengthwise. Fluff the insides with a fork.
- Spoon the kısır mixture generously into each potato, and serve warm.
