- Shrimp (peeled and deveined) - 200 grams
- Fine bulgur - 100 grams
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 medium, diced
- Red onion - 1 small, finely chopped
- Parsley - 30 grams, chopped
- Mint - 10 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
- Water - 200 ml
Steps
- In a bowl, combine fine bulgur and 200 ml of hot water, cover, and let it sit for about 15 minutes or until the bulgur absorbs the water and softens.
- While the bulgur is resting, heat 1 tablespoon of olive oil in a pan over medium heat and sauté the shrimp for about 5-7 minutes or until they turn pink and opaque. Season with salt, black pepper, and paprika. Remove from heat and let cool slightly.
- In a large mixing bowl, add the softened bulgur, cherry tomatoes, cucumber, red onion, parsley, and mint.
- In a small bowl, whisk together the remaining olive oil and lemon juice, then pour over the bulgur mixture and toss gently until well combined.
- Add the sautéed shrimp to the bulgur salad, mix gently, and adjust seasoning with salt and pepper as desired.
- Serve immediately or chill for 10 minutes before serving for enhanced flavors.
