Ingredients

  • Shrimp (peeled and deveined) - 200 grams
  • Fine bulgur - 100 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Parsley - 30 grams, chopped
  • Mint - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Water - 200 ml

Steps

  1. In a bowl, combine fine bulgur and 200 ml of hot water, cover, and let it sit for about 15 minutes or until the bulgur absorbs the water and softens.
  2. While the bulgur is resting, heat 1 tablespoon of olive oil in a pan over medium heat and sauté the shrimp for about 5-7 minutes or until they turn pink and opaque. Season with salt, black pepper, and paprika. Remove from heat and let cool slightly.
  3. In a large mixing bowl, add the softened bulgur, cherry tomatoes, cucumber, red onion, parsley, and mint.
  4. In a small bowl, whisk together the remaining olive oil and lemon juice, then pour over the bulgur mixture and toss gently until well combined.
  5. Add the sautéed shrimp to the bulgur salad, mix gently, and adjust seasoning with salt and pepper as desired.
  6. Serve immediately or chill for 10 minutes before serving for enhanced flavors.
