- Calamari - 400 grams, cleaned and tentacles separated
- Fine bulgur - 100 grams
- Boiling water - 200 ml
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Red onion - 1 small, finely chopped
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pomegranate molasses - 1 teaspoon (optional)
Steps
- In a bowl, combine the fine bulgur with boiling water, cover, and let it sit for about 15 minutes until the bulgur is tender.
- Once the bulgur is ready, fluff it with a fork and mix in the diced tomato, cucumber, red onion, parsley, mint, olive oil, lemon juice, salt, and pepper. Stir until well combined.
- Preheat the grill or a skillet over medium heat.
- Stuff each calamari tube with the bulgur mixture, filling them generously but not overstuffing.
- Secure the ends of the calamari with toothpicks to prevent the filling from spilling out during cooking.
- Grill the stuffed calamari for about 2-3 minutes on each side until they are cooked through and slightly charred.
- Remove from heat, and drizzle with pomegranate molasses if using before serving.
