Ingredients

  • Calamari - 400 grams, cleaned and tentacles separated
  • Fine bulgur - 100 grams
  • Boiling water - 200 ml
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pomegranate molasses - 1 teaspoon (optional)

Steps

  1. In a bowl, combine the fine bulgur with boiling water, cover, and let it sit for about 15 minutes until the bulgur is tender.
  2. Once the bulgur is ready, fluff it with a fork and mix in the diced tomato, cucumber, red onion, parsley, mint, olive oil, lemon juice, salt, and pepper. Stir until well combined.
  3. Preheat the grill or a skillet over medium heat.
  4. Stuff each calamari tube with the bulgur mixture, filling them generously but not overstuffing.
  5. Secure the ends of the calamari with toothpicks to prevent the filling from spilling out during cooking.
  6. Grill the stuffed calamari for about 2-3 minutes on each side until they are cooked through and slightly charred.
