- Large ripe tomatoes - 4
- Fine bulgur - 100 grams
- Boiling water - 150 ml
- Fresh parsley - 50 grams, chopped
- Fresh mint - 20 grams, chopped
- Red onion - 1 small, finely chopped
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pomegranate molasses - 1 tablespoon (optional)
Steps
- Start by rinsing the bulgur under cold water in a fine mesh sieve, then place it in a bowl and pour boiling water over it. Cover with a lid or plastic wrap and let it sit for about 15-20 minutes until it absorbs the water and softens.
- While the bulgur is soaking, prepare the tomatoes. Cut the tops off the tomatoes and scoop out the insides using a spoon, creating a hollow shell. Reserve the scooped-out flesh in a bowl.
- In the bowl with the reserved tomato flesh, add the chopped red onion, parsley, mint, olive oil, lemon juice, salt, black pepper, and pomegranate molasses (if using). Mix well to combine.
- Once the bulgur is ready, fluff it with a fork and add it to the tomato mixture. Stir everything together until well combined.
- Stuff each hollowed-out tomato with the bulgur mixture, packing it lightly. Place the stuffed tomatoes upright on a serving plate.
- Refrigerate for at least 15 minutes before serving to allow the flavors to meld together. Serve chilled or at room temperature.
