Ingredients

  • Bulgur - 100 grams
  • Boiling water - 150 milliliters
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Green onion - 2 stalks, finely chopped
  • Parsley - 30 grams, finely chopped
  • Mint - 10 grams, finely chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bell peppers - 2 medium (any color)

Steps

  1. In a bowl, combine the bulgur and boiling water. Cover and let it sit for about 15 minutes until the bulgur absorbs the water and becomes tender.
  2. Once the bulgur is ready, fluff it with a fork and add the diced tomato, cucumber, green onion, parsley, and mint. Mix well.
  3. Drizzle the olive oil and lemon juice over the bulgur mixture, then season with salt and black pepper. Stir until everything is evenly combined.
  4. Cut the tops off the bell peppers and remove the seeds and membranes. Stuff the peppers with the bulgur salad mixture, pressing down lightly to pack it in.
  5. Place the stuffed peppers upright in a serving dish, and drizzle a little extra olive oil on top if desired. Serve immediately or refrigerate for an hour before serving for a chilled option.
