- Bulgur - 100 grams
- Boiling water - 150 milliliters
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Green onion - 2 stalks, finely chopped
- Parsley - 30 grams, finely chopped
- Mint - 10 grams, finely chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bell peppers - 2 medium (any color)
Steps
- In a bowl, combine the bulgur and boiling water. Cover and let it sit for about 15 minutes until the bulgur absorbs the water and becomes tender.
- Once the bulgur is ready, fluff it with a fork and add the diced tomato, cucumber, green onion, parsley, and mint. Mix well.
- Drizzle the olive oil and lemon juice over the bulgur mixture, then season with salt and black pepper. Stir until everything is evenly combined.
- Cut the tops off the bell peppers and remove the seeds and membranes. Stuff the peppers with the bulgur salad mixture, pressing down lightly to pack it in.
- Place the stuffed peppers upright in a serving dish, and drizzle a little extra olive oil on top if desired. Serve immediately or refrigerate for an hour before serving for a chilled option.
