Ingredients

  • Fresh white fish fillets (such as sea bass) - 250 grams
  • Fine bulgur - 100 grams
  • Boiling water - 200 ml
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Parsley - 30 grams, chopped
  • Mint - 10 grams, chopped
  • Olive oil - 3 tablespoons
  • Lemon - 1, juiced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pomegranate molasses - 1 tablespoon (optional)

Steps

  1. In a bowl, combine the fine bulgur with boiling water, cover, and let it sit for about 15 minutes until the bulgur absorbs the water and becomes tender.
  2. While the bulgur is soaking, prepare the fish by seasoning both sides with salt and black pepper.
  3. Heat a non-stick pan over medium heat, add 1 tablespoon of olive oil, and cook the fish fillets for about 3-4 minutes on each side until golden and cooked through. Remove from heat and let it rest.
  4. In a large bowl, fluff the cooked bulgur with a fork. Add the cherry tomatoes, cucumber, red onion, parsley, mint, remaining olive oil, lemon juice, and pomegranate molasses if using.
  5. Mix all the ingredients well and season with additional salt and pepper to taste.
  6. Serve the fish on a plate alongside a generous portion of the kısır salad.
