  • Cucumber - 1 small, finely diced
  • Red bell pepper - 1 small, finely diced
  • Green onion - 2 stalks, finely chopped
  • Parsley - 20 grams, finely chopped
  • Mint - 10 grams, finely chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pomegranate molasses - 1 teaspoon (optional)

Steps

  1. In a mixing bowl, combine the fine bulgur wheat with boiling water, cover, and let it absorb for about 15 minutes until the bulgur is soft.
  2. Fluff the bulgur with a fork, then add the diced tomato, cucumber, red bell pepper, green onion, parsley, and mint.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and pomegranate molasses if using.
  4. Pour the dressing over the bulgur mixture and toss everything together until well combined.
  5. Let the kısır sit for at least 10 minutes to allow the flavors to meld before serving.
