Ingredients

  • Fine bulgur - 100 grams

  • Fresh lemon juice - 2 tablespoons
  • Tomato - 1 medium, finely diced
  • Cucumber - 1 small, finely diced
  • Green onion - 2 stalks, finely sliced
  • Parsley - 30 grams, finely chopped
  • Mint - 10 grams, finely chopped
  • Pomegranate seeds - 50 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large mixing bowl, combine the fine bulgur and hot water. Cover and let sit for about 10-15 minutes until the bulgur absorbs the water and becomes tender.
  2. Once the bulgur is ready, fluff it with a fork and add the olive oil and lemon juice. Mix well to combine.
  3. Add the diced tomato, cucumber, green onion, parsley, and mint to the bulgur mixture. Stir gently to combine all the ingredients.
  4. Season with salt and black pepper to taste. Adjust the seasoning if necessary.
  5. Finally, fold in the pomegranate seeds, ensuring they are evenly distributed throughout the salad.
