Ingredients

  • Tomato paste - 1 tablespoon
  • Fresh parsley - 30 grams, finely chopped
  • Fresh mint - 15 grams, finely chopped
  • Green onion - 2 stalks, finely sliced
  • Cucumber - 1 small, diced
  • Cherry tomatoes - 100 grams, halved
  • Lemon juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Walnuts - 30 grams, chopped
  • Almonds - 30 grams, chopped

Steps

  1. In a medium bowl, pour the boiling water over the fine bulgur and let it sit for about 15 minutes until it absorbs the water and softens.
  2. Once the bulgur is ready, fluff it with a fork and let it cool for a few minutes.
  3. In a separate bowl, whisk together the olive oil, tomato paste, lemon juice, salt, and black pepper until well combined.
  4. Add the chopped parsley, mint, green onion, cucumber, and cherry tomatoes to the bulgur and mix gently.
