- Red bell pepper (diced) - 1 medium
- Green onion (chopped) - 2 stalks
- Parsley (chopped) - 30 grams
- Mint leaves (chopped) - 10 grams
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pomegranate molasses - 1 tablespoon (optional)
Steps
- Rinse the bulgur wheat under cold water and then soak it in warm water for about 15 minutes until it absorbs the water and softens.
- While the bulgur is soaking, prepare the vegetables: dice the tomato, cucumber, and red bell pepper. Chop the green onion, parsley, and mint leaves.
- In a large bowl, combine the soaked bulgur wheat with the diced vegetables and cooked chickpeas.
- In a separate small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and pomegranate molasses (if using).
- Pour the dressing over the bulgur mixture and toss gently to combine all the ingredients well.
