Ingredients

  • Bulgur wheat - 100 grams
  • Chickpeas (cooked) - 200 grams
  • Tomato (diced) - 1 medium
  • Cucumber (diced) - 1 medium
  • Red bell pepper (diced) - 1 medium
  • Green onion (chopped) - 2 stalks
  • Parsley (chopped) - 30 grams
  • Mint leaves (chopped) - 10 grams
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pomegranate molasses - 1 tablespoon (optional)

Steps

  1. Rinse the bulgur wheat under cold water and then soak it in warm water for about 15 minutes until it absorbs the water and softens.
  2. While the bulgur is soaking, prepare the vegetables: dice the tomato, cucumber, and red bell pepper. Chop the green onion, parsley, and mint leaves.
  3. In a large bowl, combine the soaked bulgur wheat with the diced vegetables and cooked chickpeas.
  4. In a separate small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and pomegranate molasses (if using).
