- Pine nuts - 30 grams, toasted
Steps
- In a bowl, combine the fine bulgur with boiling water, cover, and let it sit for 15 minutes to absorb the water.
- In a large mixing bowl, whisk together olive oil, lemon juice, salt, black pepper, and paprika.
- Fluff the soaked bulgur with a fork, then add it to the mixing bowl with the dressing.
- Fold in the diced tomato, cucumber, red onion, parsley, and mint, mixing gently until well combined.
- Transfer the mixture into a baking dish and smooth the top with a spatula.
- Sprinkle the toasted pine nuts evenly over the top.
