Ingredients

  • Fine bulgur - 100 grams
  • Hot water - 150 ml
  • Tomato - 1 medium, finely diced
  • Cucumber - 1 small, finely diced
  • Red onion - 1 small, finely chopped
  • Parsley - 1/2 cup, finely chopped
  • Mint - 1/4 cup, finely chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pomegranate molasses - 1 tablespoon (optional)

Steps

  1. In a large bowl, place the fine bulgur and pour the hot water over it. Cover the bowl with a lid or plastic wrap and let it sit for 10-15 minutes until the bulgur absorbs the water and becomes tender.
  2. Once the bulgur is ready, fluff it with a fork to separate the grains.
  3. Add the finely diced tomato, cucumber, red onion, parsley, and mint to the bulgur. Mix well to combine.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, black pepper, and pomegranate molasses (if using).
  5. Pour the dressing over the bulgur mixture and toss gently until everything is evenly coated.
  6. Taste and adjust seasoning if necessary. Let it sit for another 5 minutes to allow the flavors to meld before serving.
