Ingredients
- Fine bulgur - 100 grams
- Hot water - 150 ml
- Tomato - 1 medium, finely diced
- Cucumber - 1 small, finely diced
- Red onion - 1 small, finely chopped
- Parsley - 1/2 cup, finely chopped
- Mint - 1/4 cup, finely chopped
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pomegranate molasses - 1 tablespoon (optional)
Steps
- In a large bowl, place the fine bulgur and pour the hot water over it. Cover the bowl with a lid or plastic wrap and let it sit for 10-15 minutes until the bulgur absorbs the water and becomes tender.
- Once the bulgur is ready, fluff it with a fork to separate the grains.
- Add the finely diced tomato, cucumber, red onion, parsley, and mint to the bulgur. Mix well to combine.
- In a small bowl, whisk together the lemon juice, olive oil, salt, black pepper, and pomegranate molasses (if using).
- Pour the dressing over the bulgur mixture and toss gently until everything is evenly coated.
- Taste and adjust seasoning if necessary. Let it sit for another 5 minutes to allow the flavors to meld before serving.
