- Fine bulgur - 100 grams
- Boiling water - 200 ml
- Fresh parsley, finely chopped - 30 grams
- Fresh mint, finely chopped - 15 grams
- Tomato, finely diced - 1 medium
- Cucumber, finely diced - 1 small
- Red bell pepper, finely diced - 1 small
- Green onion, finely chopped - 2 stalks
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pomegranate molasses - 1 tablespoon (optional)
Steps
- In a mixing bowl, combine the fine bulgur and boiling water. Cover the bowl with a lid or plastic wrap and let it sit for about 10 minutes, or until the bulgur absorbs the water and becomes tender.
- Once the bulgur is ready, fluff it with a fork and let it cool slightly.
- Add the chopped parsley, mint, tomato, cucumber, red bell pepper, and green onion to the bulgur. Mix well to combine all the ingredients.
- In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and pomegranate molasses (if using).
- Pour the dressing over the bulgur salad and toss gently to coat all the ingredients evenly.
- Serve chilled or at room temperature, garnished with extra herbs if desired.
