Ingredients

  • Fine bulgur - 100 grams
  • Boiling water - 200 ml
  • Fresh parsley, finely chopped - 30 grams
  • Fresh mint, finely chopped - 15 grams
  • Tomato, finely diced - 1 medium
  • Cucumber, finely diced - 1 small
  • Red bell pepper, finely diced - 1 small
  • Green onion, finely chopped - 2 stalks
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pomegranate molasses - 1 tablespoon (optional)

Steps

  1. In a mixing bowl, combine the fine bulgur and boiling water. Cover the bowl with a lid or plastic wrap and let it sit for about 10 minutes, or until the bulgur absorbs the water and becomes tender.
  2. Once the bulgur is ready, fluff it with a fork and let it cool slightly.
  3. Add the chopped parsley, mint, tomato, cucumber, red bell pepper, and green onion to the bulgur. Mix well to combine all the ingredients.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and pomegranate molasses (if using).
  5. Pour the dressing over the bulgur salad and toss gently to coat all the ingredients evenly.
  6. Serve chilled or at room temperature, garnished with extra herbs if desired.
