Ingredients

  • Fine bulgur - 100 grams
  • Boiling water - 150 ml
  • Tomato - 1 medium, finely chopped
  • Cucumber - 1 small, finely chopped
  • Red bell pepper - 1 small, finely chopped
  • Green onion - 2, finely chopped
  • Parsley - 30 grams, finely chopped
  • Mint leaves - 10 grams, finely chopped
  • Olive oil - 30 ml
  • Lemon juice - 30 ml
  • Pomegranate molasses - 15 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine the fine bulgur and boiling water. Cover and let it sit for about 10 minutes until the bulgur absorbs the water and softens.
  2. Once the bulgur is ready, fluff it with a fork to separate the grains.
  3. Add the chopped tomato, cucumber, red bell pepper, green onion, parsley, and mint leaves to the bulgur.
  4. In a separate small bowl, whisk together the olive oil, lemon juice, pomegranate molasses, salt, and black pepper to create the dressing.
  5. Pour the dressing over the bulgur mixture and toss gently to combine all ingredients evenly.
  6. Taste and adjust seasoning if necessary. Let it sit for about 5 minutes for the flavors to meld before serving.
