  • Cucumber - 1 medium, diced
  • Red bell pepper - 1 small, diced
  • Green onion - 2 stalks, chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pomegranate molasses - 1 tablespoon (optional)

Steps

  1. In a bowl, combine bulgur and boiling water. Cover and let it soak for about 15 minutes until the bulgur absorbs the water and becomes tender.
  2. Fluff the bulgur with a fork, then add olive oil, lemon juice, salt, and black pepper. Mix well to combine.
  3. Stir in the diced tomato, cucumber, red bell pepper, and green onion.
  4. Add the chopped parsley and mint, mixing gently until all ingredients are evenly distributed.
  5. If using, drizzle pomegranate molasses over the top and give it one last gentle mix.
