- Green onion - 2 stalks, chopped
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pomegranate molasses - 1 tablespoon (optional)
Steps
- In a bowl, combine bulgur and boiling water. Cover and let it soak for about 15 minutes until the bulgur absorbs the water and becomes tender.
- Fluff the bulgur with a fork, then add olive oil, lemon juice, salt, and black pepper. Mix well to combine.
- Stir in the diced tomato, cucumber, red bell pepper, and green onion.
- Add the chopped parsley and mint, mixing gently until all ingredients are evenly distributed.
- If using, drizzle pomegranate molasses over the top and give it one last gentle mix.
