- Whole wheat flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 5 grams
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Fine bulgur - 100 grams
- Tomato paste - 2 tablespoons
- Lemon juice - 2 tablespoons
- Cucumber - 100 grams, diced
- Tomato - 100 grams, diced
- Red onion - 50 grams, finely chopped
- Parsley - 30 grams, chopped
- Mint - 10 grams, chopped
- Salt - to taste
- Pepper - to taste
- Pomegranate molasses - 1 tablespoon
Steps
- In a bowl, mix warm water with yeast and let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine whole wheat flour and salt. Gradually add the yeast mixture and olive oil, mixing until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover with a cloth and let it rise in a warm place for 30 minutes.
- Meanwhile, soak the fine bulgur in 200 ml of hot water for 15 minutes until softened. Drain any excess water if needed.
- In a large bowl, combine the softened bulgur, tomato paste, lemon juice, diced cucumber, diced tomato, chopped red onion, parsley, mint, salt, pepper, and pomegranate molasses. Mix well until fully combined.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, divide it into two equal portions. Roll each portion into an oval shape on a floured surface.
- Place the rolled dough on a baking sheet lined with parchment paper. Spoon the bulgur mixture onto the center of each dough, spreading it evenly, leaving a small border.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden and crispy.
- Remove from the oven, let cool for a few minutes, then slice and serve warm.
