Ingredients

  • Fine bulgur - 50 grams
  • Water - 500 ml
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Red bell pepper - 1 small, diced
  • Green onion - 2, chopped
  • Parsley - 30 grams, finely chopped
  • Mint - 10 grams, finely chopped
  • Olive oil - 1 tablespoon
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. In a medium saucepan, bring 500 ml of water to a boil.
  2. Add the fine bulgur to the boiling water, stir, and remove from heat. Cover and let it sit for 15 minutes to absorb the water.
  3. In a mixing bowl, combine the diced tomato, cucumber, red bell pepper, green onion, parsley, and mint.
  4. Once the bulgur has absorbed all the water, fluff it with a fork and add it to the mixing bowl with the vegetables.
  5. Drizzle olive oil and lemon juice over the mixture, then season with salt, black pepper, and paprika. Stir well to combine all ingredients.
  6. Serve the soup warm or chilled, garnished with additional herbs if desired.
