Ingredients
- Fine bulgur - 50 grams
- Water - 500 ml
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Red bell pepper - 1 small, diced
- Green onion - 2, chopped
- Parsley - 30 grams, finely chopped
- Mint - 10 grams, finely chopped
- Olive oil - 1 tablespoon
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
Steps
- In a medium saucepan, bring 500 ml of water to a boil.
- Add the fine bulgur to the boiling water, stir, and remove from heat. Cover and let it sit for 15 minutes to absorb the water.
- In a mixing bowl, combine the diced tomato, cucumber, red bell pepper, green onion, parsley, and mint.
- Once the bulgur has absorbed all the water, fluff it with a fork and add it to the mixing bowl with the vegetables.
- Drizzle olive oil and lemon juice over the mixture, then season with salt, black pepper, and paprika. Stir well to combine all ingredients.
- Serve the soup warm or chilled, garnished with additional herbs if desired.
