- Boiling water - 150 milliliters

- Cucumber - 1 small, finely chopped
- Red bell pepper - 1 small, finely chopped
- Green onion - 2, finely chopped
- Fresh parsley - 30 grams, finely chopped
- Fresh mint - 15 grams, finely chopped
- Olive oil - 2 tablespoons
- Fresh lemon juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pomegranate molasses - 1 tablespoon (optional)
Steps
- Place the fine bulgur in a large mixing bowl. Pour boiling water over the bulgur, cover it with a lid or plastic wrap, and let it sit for about 10-15 minutes until the bulgur absorbs the water and becomes tender.
- Once the bulgur is ready, fluff it with a fork and let it cool for a few minutes.
- Add the chopped tomato, cucumber, red bell pepper, green onion, parsley, and mint to the bulgur. Mix well to combine.
- In a small bowl, whisk together the olive oil, fresh lemon juice, salt, black pepper, and pomegranate molasses (if using). Pour the dressing over the bulgur mixture and toss until everything is evenly coated.
- Taste and adjust seasoning if necessary. Serve chilled or at room temperature.
