Ingredients

  • Whole wheat pasta - 150 grams
  • Tomato - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Green onion - 2 stalks, chopped
  • Parsley - 30 grams, finely chopped
  • Mint - 15 grams, finely chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pomegranate molasses - 1 tablespoon (optional)

Steps

  1. Boil water in a pot and add a pinch of salt. Cook the whole wheat pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, prepare the vegetables: dice the tomato, cucumber, and red bell pepper. Chop the green onion, parsley, and mint finely.
  3. In a large mixing bowl, combine the diced tomato, cucumber, red bell pepper, green onion, parsley, and mint.
  4. Once the pasta is cooked, drain it and rinse under cold water to stop the cooking process. Add the pasta to the bowl with the vegetables.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and pomegranate molasses (if using) to create the dressing.
  6. Pour the dressing over the pasta and vegetable mixture, and toss well to combine all ingredients thoroughly.
  7. Serve chilled or at room temperature, garnished with extra herbs if desired.
