Ingredients
- Fine bulgur - 100 grams
- Boiling water - 200 ml
- Tomato - 1 medium, finely chopped
- Cucumber - 1 small, finely chopped
- Red onion - 1 small, finely chopped
- Parsley - 50 grams, finely chopped
- Mint - 20 grams, finely chopped
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Pita bread or lettuce leaves - for serving
Steps
- In a large bowl, add the fine bulgur and pour in the boiling water. Cover the bowl with a lid or plastic wrap and let it sit for about 15 minutes, or until the bulgur absorbs the water and softens.
- Once the bulgur is ready, fluff it with a fork and let it cool slightly.
- Add the chopped tomato, cucumber, red onion, parsley, and mint to the bulgur and mix well.
- In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, cumin, and paprika until well combined.
- Pour the dressing over the bulgur mixture and mix thoroughly until all ingredients are well coated.
- Shape the mixture into patties, about 4-5 cm in diameter, and set aside on a plate.
- Heat a non-stick skillet over medium heat. Optionally, you can lightly coat it with olive oil.
- Cook the patties for about 3-4 minutes on each side or until they are golden brown and slightly crispy.
- Serve the Kısır Köftesi in pita bread or on lettuce leaves, garnished with extra herbs or vegetables as desired.
