Ingredients

  • Bulgur - 100 grams
  • Hot water - 150 ml
  • Chickpeas (cooked) - 100 grams
  • Red bell pepper (finely chopped) - 50 grams
  • Cucumber (finely chopped) - 50 grams
  • Tomato (finely chopped) - 50 grams
  • Fresh parsley (finely chopped) - 30 grams
  • Fresh mint (finely chopped) - 15 grams
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Burger buns - 2
  • Lettuce leaves - 2
  • Avocado (sliced) - 1/2
  • Tahini - 1 tablespoon

Steps

  1. In a bowl, combine bulgur and hot water. Cover and let it sit for 15 minutes until the bulgur is softened.
  2. Once bulgur is ready, fluff it with a fork and add cooked chickpeas, red bell pepper, cucumber, tomato, parsley, and mint. Mix well.
  3. In a separate bowl, whisk together lemon juice, olive oil, salt, black pepper, and cumin. Pour this dressing over the bulgur mixture and stir until well combined.
  4. Form the mixture into two patties and refrigerate for 10 minutes to firm up.
  5. While the patties are chilling, prepare the burger buns by toasting them lightly if desired.
  6. To assemble the burgers, place a lettuce leaf on the bottom half of each bun, add a bulgur patty, top with avocado slices, and drizzle with tahini.
  7. Cover with the top half of the bun and serve immediately.
