Ingredients
- Bulgur - 100 grams
- Hot water - 150 ml
- Chickpeas (cooked) - 100 grams
- Red bell pepper (finely chopped) - 50 grams
- Cucumber (finely chopped) - 50 grams
- Tomato (finely chopped) - 50 grams
- Fresh parsley (finely chopped) - 30 grams
- Fresh mint (finely chopped) - 15 grams
- Lemon juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Burger buns - 2
- Lettuce leaves - 2
- Avocado (sliced) - 1/2
- Tahini - 1 tablespoon
Steps
- In a bowl, combine bulgur and hot water. Cover and let it sit for 15 minutes until the bulgur is softened.
- Once bulgur is ready, fluff it with a fork and add cooked chickpeas, red bell pepper, cucumber, tomato, parsley, and mint. Mix well.
- In a separate bowl, whisk together lemon juice, olive oil, salt, black pepper, and cumin. Pour this dressing over the bulgur mixture and stir until well combined.
- Form the mixture into two patties and refrigerate for 10 minutes to firm up.
- While the patties are chilling, prepare the burger buns by toasting them lightly if desired.
- To assemble the burgers, place a lettuce leaf on the bottom half of each bun, add a bulgur patty, top with avocado slices, and drizzle with tahini.
- Cover with the top half of the bun and serve immediately.
