Ingredients

  • Fine bulgur - 100 grams
  • Boiling water - 200 ml
  • Tomato - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1 small, diced
  • Green onion - 2, finely chopped
  • Fresh parsley - 30 grams, finely chopped
  • Fresh mint - 15 grams, finely chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pomegranate molasses - 1 tablespoon (optional)

Steps

  1. In a bowl, combine the fine bulgur and boiling water. Cover and let it sit for 10-15 minutes until the bulgur absorbs the water and softens.
  2. Fluff the bulgur with a fork and let it cool to room temperature.
  3. Add the diced tomato, cucumber, red bell pepper, and green onion to the bulgur.
  4. Stir in the chopped parsley and mint.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and pomegranate molasses (if using).
  6. Pour the dressing over the bulgur and vegetable mixture, then gently toss to combine all ingredients evenly.
  7. Taste and adjust seasoning if necessary, then serve immediately or refrigerate for 30 minutes to let the flavors meld.
