- Fine bulgur - 100 grams
- Boiling water - 200 ml
- Tomato - 1 medium, diced
- Cucumber - 1 medium, diced
- Red bell pepper - 1 small, diced
- Green onion - 2, finely chopped
- Fresh parsley - 30 grams, finely chopped
- Fresh mint - 15 grams, finely chopped
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pomegranate molasses - 1 tablespoon (optional)
Steps
- In a bowl, combine the fine bulgur and boiling water. Cover and let it sit for 10-15 minutes until the bulgur absorbs the water and softens.
- Fluff the bulgur with a fork and let it cool to room temperature.
- Add the diced tomato, cucumber, red bell pepper, and green onion to the bulgur.
- Stir in the chopped parsley and mint.
- In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and pomegranate molasses (if using).
- Pour the dressing over the bulgur and vegetable mixture, then gently toss to combine all ingredients evenly.
- Taste and adjust seasoning if necessary, then serve immediately or refrigerate for 30 minutes to let the flavors meld.
