Ingredients

  • Red bell peppers - 2 large (approximately 300g)
  • Onion - 1 medium (approximately 150g)
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons (30ml)
  • Vegetable broth - 500ml
  • Coconut milk - 100ml
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Paprika - 1 teaspoon (2g)
  • Fresh basil - a handful (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F). Cut the red bell peppers in half, remove the seeds, and place them on a baking sheet with the skin side up.
  2. Roast the peppers in the oven for 20 minutes or until the skins are charred and blistered. Remove from the oven and let them cool slightly before peeling off the skins.
  3. In a pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 5 minutes until the onion is translucent.
  4. Add the roasted peppers to the pot, along with the vegetable broth, salt, black pepper, and paprika. Bring to a boil, then reduce the heat and let it simmer for 5 minutes.
  5. Using an immersion blender, blend the soup until smooth. Stir in the coconut milk and heat through for another 2 minutes.
  6. Serve hot, garnished with fresh basil.
