- Ground beef - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Rice - 150 grams (uncooked)
- Water - 300 ml
- Olive oil - 3 tablespoons
- Tomato - 1 medium, diced
- Bell pepper - 1 medium, diced
- Paprika - 1 teaspoon
- Lemon juice - 1 tablespoon
Steps
- In a mixing bowl, combine ground beef, half of the chopped onion, minced garlic, parsley, salt, black pepper, and cumin. Mix well and form small meatballs (about 2.5 cm in diameter).
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides, approximately 8-10 minutes. Remove and set aside.
- In the same skillet, add the remaining onion and sauté until translucent. Add diced tomato, bell pepper, and paprika. Cook for another 5 minutes until vegetables are softened.
- Stir in the rice and cook for 2 minutes, allowing it to absorb the flavors. Add water and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, gently place the meatballs on top of the rice. Drizzle with remaining olive oil and lemon juice. Cover again and cook for an additional 10 minutes, or until the rice is tender and the water is absorbed.
- Remove from heat and let sit for 5 minutes before serving. Fluff the rice with a fork and serve warm.
