- Fresh anchovies - 250 grams
- Ground lamb - 150 grams
- Fresh parsley - 2 tablespoons, chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Almond flour - 2 tablespoons
- Egg - 1, beaten
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Lemon - 1, juiced
Steps
- Preheat the oven to 200°C (400°F).
- Clean the anchovies by removing the heads and innards, then rinse and pat dry.
- In a mixing bowl, combine the ground lamb, chopped parsley, onion, garlic, almond flour, beaten egg, salt, black pepper, and paprika. Mix until well combined.
- Form small meatballs (about 2.5 cm in diameter) from the meat mixture.
- In a large oven-proof skillet, heat 1 tablespoon of olive oil over medium heat. Add the meatballs and brown them on all sides, approximately 5-7 minutes.
- Once browned, add the cleaned anchovies over the meatballs in the skillet.
- Drizzle the remaining olive oil and lemon juice over the anchovies and meatballs.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, until the anchovies are cooked through.
- Remove from the oven, let it cool slightly, and serve warm with a sprinkle of fresh parsley.
