Ingredients

  • Fresh anchovies - 250 grams
  • Ground lamb - 150 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Almond flour - 2 tablespoons
  • Egg - 1, beaten
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Lemon - 1, juiced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Clean the anchovies by removing the heads and innards, then rinse and pat dry.
  3. In a mixing bowl, combine the ground lamb, chopped parsley, onion, garlic, almond flour, beaten egg, salt, black pepper, and paprika. Mix until well combined.
  4. Form small meatballs (about 2.5 cm in diameter) from the meat mixture.
  5. In a large oven-proof skillet, heat 1 tablespoon of olive oil over medium heat. Add the meatballs and brown them on all sides, approximately 5-7 minutes.
  6. Once browned, add the cleaned anchovies over the meatballs in the skillet.
  7. Drizzle the remaining olive oil and lemon juice over the anchovies and meatballs.
  8. Transfer the skillet to the preheated oven and bake for 10-12 minutes, until the anchovies are cooked through.
  9. Remove from the oven, let it cool slightly, and serve warm with a sprinkle of fresh parsley.
