Köfteci Pide

Ingredients
- All-purpose flour - 250g
- Warm water - 150ml
- Active dry yeast - 5g
- Sugar - 5g
- Salt - 5g
- Olive oil - 20ml
- Ground beef - 200g
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1, finely chopped
- Tomato paste - 1 tbsp
- Parsley - 2 tbsp, chopped
- Cumin - 1 tsp
- Paprika - 1 tsp
- Black pepper - 1/2 tsp
- Salt - 1/2 tsp
- Egg - 1 (for egg wash)
Steps
- In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
- In a mixing bowl, combine flour and salt. Add the yeast mixture and olive oil, then knead until the dough is smooth and elastic, about 10 minutes.
- Cover the dough with a damp cloth and let it rise in a warm place for about 30 minutes or until doubled in size.
- Meanwhile, in a skillet, heat a little olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
- Add the ground beef, red bell pepper, tomato paste, parsley, cumin, paprika, black pepper, and salt. Cook until the meat is browned and cooked through, about 7-10 minutes. Remove from heat and let it cool slightly.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into an oval shape about 1 cm thick.
- Place the rolled dough on a baking sheet lined with parchment paper. Spoon the meat mixture along the center of each oval, leaving edges to fold over.
- Fold the edges of the dough over the filling to create a boat shape, pinching to seal.
- Brush the tops with beaten egg for a golden finish.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
- Remove from the oven and let cool for a few minutes before slicing and serving.
