Ingredients

  • All-purpose flour - 250g
  • Warm water - 150ml
  • Active dry yeast - 5g
  • Sugar - 5g
  • Salt - 5g
  • Olive oil - 20ml
  • Ground beef - 200g
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, finely chopped
  • Tomato paste - 1 tbsp
  • Parsley - 2 tbsp, chopped
  • Cumin - 1 tsp
  • Paprika - 1 tsp
  • Black pepper - 1/2 tsp
  • Salt - 1/2 tsp
  • Egg - 1 (for egg wash)

Steps

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a mixing bowl, combine flour and salt. Add the yeast mixture and olive oil, then knead until the dough is smooth and elastic, about 10 minutes.
  3. Cover the dough with a damp cloth and let it rise in a warm place for about 30 minutes or until doubled in size.
  4. Meanwhile, in a skillet, heat a little olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
  5. Add the ground beef, red bell pepper, tomato paste, parsley, cumin, paprika, black pepper, and salt. Cook until the meat is browned and cooked through, about 7-10 minutes. Remove from heat and let it cool slightly.
  6. Preheat the oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into an oval shape about 1 cm thick.
  8. Place the rolled dough on a baking sheet lined with parchment paper. Spoon the meat mixture along the center of each oval, leaving edges to fold over.
  9. Fold the edges of the dough over the filling to create a boat shape, pinching to seal.
  10. Brush the tops with beaten egg for a golden finish.
  11. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
  12. Remove from the oven and let cool for a few minutes before slicing and serving.
