Ingredients

  • Ground lamb - 250 grams
  • Ground beef - 250 grams
  • Onion - 1 medium, finely grated
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Red pepper flakes - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Lemon - 1, juiced
  • Bell pepper - 1, cut into chunks (for skewering)
  • Zucchini - 1, sliced (for skewering)

Steps

  1. In a large bowl, combine the ground lamb and ground beef with grated onion, minced garlic, chopped parsley, paprika, cumin, black pepper, salt, and red pepper flakes.
  2. Mix the ingredients thoroughly by hand until well combined. If the mixture is too wet, add a little more ground beef.
  3. Cover the mixture with plastic wrap and refrigerate for at least 15 minutes to allow the flavors to meld.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Wet your hands and shape the meat mixture into elongated kebab shapes around skewers.
  6. Alternate threading pieces of bell pepper and zucchini onto the skewers with the meat.
  7. Brush the skewers lightly with olive oil and place them on the grill.
  8. Grill the kebabs for about 10-12 minutes, turning occasionally, until they are cooked through and have nice grill marks.
  9. Remove from the grill and let them rest for a few minutes before serving with lemon juice squeezed over the top.
