- Ground lamb - 250 grams
- Ground beef - 250 grams
- Onion - 1 medium, finely grated
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Red pepper flakes - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Lemon - 1, juiced
- Bell pepper - 1, cut into chunks (for skewering)
- Zucchini - 1, sliced (for skewering)
Steps
- In a large bowl, combine the ground lamb and ground beef with grated onion, minced garlic, chopped parsley, paprika, cumin, black pepper, salt, and red pepper flakes.
- Mix the ingredients thoroughly by hand until well combined. If the mixture is too wet, add a little more ground beef.
- Cover the mixture with plastic wrap and refrigerate for at least 15 minutes to allow the flavors to meld.
- Preheat a grill or grill pan over medium-high heat.
- Wet your hands and shape the meat mixture into elongated kebab shapes around skewers.
- Alternate threading pieces of bell pepper and zucchini onto the skewers with the meat.
- Brush the skewers lightly with olive oil and place them on the grill.
- Grill the kebabs for about 10-12 minutes, turning occasionally, until they are cooked through and have nice grill marks.
- Remove from the grill and let them rest for a few minutes before serving with lemon juice squeezed over the top.
