Ingredients

  • Ground beef or lamb - 250 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Egg - 1, beaten
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, chopped
  • Carrot - 1 medium, sliced
  • Olive oil - 2 tablespoons
  • Tomato - 1 medium, chopped
  • Water - 100 ml

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the ground meat, chopped onion, minced garlic, parsley, cumin, paprika, salt, black pepper, and beaten egg. Mix well until all ingredients are combined.
  3. Shape the mixture into small meatballs, about 2.5 cm in diameter.
  4. In a baking dish, arrange the sliced zucchini, chopped bell pepper, and sliced carrot. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Toss to coat the vegetables evenly.
  5. Place the meatballs on top of the vegetables in the baking dish.
  6. Add the chopped tomato around the meatballs and pour the water into the dish.
  7. Drizzle the remaining tablespoon of olive oil over the meatballs and vegetables.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  9. After 30 minutes, remove the foil and bake for an additional 10 minutes, or until the meatballs are browned and cooked through.
  10. Serve warm, garnished with additional parsley if desired.
