- Ground beef or lamb - 250 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Egg - 1, beaten
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, chopped
- Carrot - 1 medium, sliced
- Olive oil - 2 tablespoons
- Tomato - 1 medium, chopped
- Water - 100 ml
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the ground meat, chopped onion, minced garlic, parsley, cumin, paprika, salt, black pepper, and beaten egg. Mix well until all ingredients are combined.
- Shape the mixture into small meatballs, about 2.5 cm in diameter.
- In a baking dish, arrange the sliced zucchini, chopped bell pepper, and sliced carrot. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Toss to coat the vegetables evenly.
- Place the meatballs on top of the vegetables in the baking dish.
- Add the chopped tomato around the meatballs and pour the water into the dish.
- Drizzle the remaining tablespoon of olive oil over the meatballs and vegetables.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 10 minutes, or until the meatballs are browned and cooked through.
- Serve warm, garnished with additional parsley if desired.
