Ingredients

  • Ground beef (or lamb) - 250 grams

  • Fresh parsley (chopped) - 2 tablespoons
  • Sumac - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon (for cooking)
  • Pita bread or burger buns - 2 pieces
  • Tomato (sliced) - 1 medium
  • Cucumber (sliced) - 1 small
  • Lettuce leaves - 2 leaves
  • Yogurt (for serving) - 2 tablespoons

Steps

  1. In a mixing bowl, combine the ground meat, grated onion, minced garlic, chopped parsley, sumac, cumin, paprika, salt, and black pepper. Mix well until all ingredients are fully incorporated.
  2. Divide the mixture into two equal portions and shape them into patties, about 2 cm thick.
  3. Heat the olive oil in a skillet over medium heat. Once hot, add the köfte patties to the skillet.
  4. Cook the patties for about 5-7 minutes on each side, or until they are browned and cooked through to your desired doneness.
  5. While the köfte is cooking, prepare the pita bread or burger buns by lightly toasting them if desired.
  6. Assemble the köfte by placing each patty on a piece of pita or bun, and topping with sliced tomato, cucumber, and lettuce leaves.
