Ingredients
- Ground beef - 250 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Rice - 150 grams (preferably Basmati)
- Chicken broth - 300 ml
- Tomato - 1 medium, diced
- Bell pepper - 1 small, diced
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, combine the ground beef, chopped onion, minced garlic, parsley, paprika, cumin, salt, and black pepper. Mix well until evenly combined.
- Shape the mixture into small meatballs, about 2.5 cm in diameter, and set aside.
- In a skillet, heat the olive oil over medium heat. Add the diced tomato and bell pepper, sautéing for about 5 minutes until softened.
- Add the rice to the skillet, stirring for 1-2 minutes to coat the rice with the tomato and pepper mixture.
- Pour in the chicken broth and bring to a simmer. Once simmering, remove from heat.
- In a baking dish, layer the rice mixture on the bottom and place the meatballs on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 10 minutes to brown the meatballs.
- Remove from the oven and let it rest for a few minutes before serving.
