Ingredients

  • Ground beef - 250 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Rice - 150 grams (preferably Basmati)
  • Chicken broth - 300 ml
  • Tomato - 1 medium, diced
  • Bell pepper - 1 small, diced

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine the ground beef, chopped onion, minced garlic, parsley, paprika, cumin, salt, and black pepper. Mix well until evenly combined.
  3. Shape the mixture into small meatballs, about 2.5 cm in diameter, and set aside.
  4. In a skillet, heat the olive oil over medium heat. Add the diced tomato and bell pepper, sautéing for about 5 minutes until softened.
  5. Add the rice to the skillet, stirring for 1-2 minutes to coat the rice with the tomato and pepper mixture.
  6. Pour in the chicken broth and bring to a simmer. Once simmering, remove from heat.
  7. In a baking dish, layer the rice mixture on the bottom and place the meatballs on top.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  9. After 30 minutes, remove the foil and bake for an additional 10 minutes to brown the meatballs.
  10. Remove from the oven and let it rest for a few minutes before serving.
