- Ground beef (kosher) - 300 grams
- Onion - 1 small, finely grated
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Flour - 200 grams
- Yeast - 5 grams
- Sugar - 1 teaspoon
- Warm water - 120 ml
- Salt - 1/2 teaspoon for dough
- Sesame seeds - for topping (optional)
Steps
- In a bowl, mix the ground beef, grated onion, minced garlic, parsley, cumin, paprika, salt, and black pepper until well combined. Form into small meatballs (about 5 cm in diameter) and set aside.
- In a separate bowl, dissolve the yeast and sugar in warm water and let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine the flour, salt, and the yeast mixture. Knead until a smooth dough forms, about 5-7 minutes. Cover with a damp cloth and let rise for 30 minutes in a warm place.
- Preheat the oven to 220°C (428°F).
- Roll the dough into two oval shapes (about 1 cm thick) and place on a baking sheet lined with parchment paper. Optionally, sprinkle sesame seeds on top.
- Using your fingers, make an indent in the center of the dough. Place the köfte meatballs on top of each pide, pressing gently to secure them.
- Drizzle olive oil over the köfte and pide, then bake in the preheated oven for 15-20 minutes or until the dough is golden and the meat is cooked through.
- Remove from the oven and let cool slightly before serving. Enjoy your köfte with pide warm.
