Ingredients

  • Red lentils - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chickpea flour - 3 tablespoons (or as needed)
  • Olive oil - for frying

Steps

  1. Rinse the red lentils under cold water until the water runs clear, then boil them in 300 ml of water for about 15 minutes until soft. Drain any excess water and set aside.
  2. In a large mixing bowl, combine the cooked lentils, chopped onion, minced garlic, grated carrot, and chopped parsley.
  3. Add cumin, paprika, salt, and black pepper to the mixture, mixing well until all ingredients are evenly incorporated.
  4. Gradually add chickpea flour to the mixture, stirring until the mixture holds together and can be shaped into patties. You may need more or less flour depending on moisture.
  5. Shape the mixture into small patties (about 5 cm in diameter).
  6. Heat olive oil in a frying pan over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown and crispy.
  7. Remove the patties from the pan and place them on a paper towel to drain excess oil. Serve warm with a side of tahini or yogurt sauce.
