- Ground beef - 250 grams
- Eggplant - 1 medium-sized
- Fresh parsley - 2 tablespoons, chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons (for grilling)
- Pita bread - 2 pieces
- Tomato - 1 medium, sliced
- Cucumber - 1 small, sliced
- Tahini - 2 tablespoons (optional for serving)
Steps
- Preheat a grill or a grill pan over medium-high heat.
- Slice the eggplant into thick rounds (about 1 cm) and brush both sides with olive oil. Sprinkle with salt and let them sit for about 10 minutes to draw out moisture.
- In a bowl, combine the ground beef, parsley, onion, garlic, cumin, paprika, salt, and black pepper. Mix well until combined.
- Form the meat mixture into patties, about 1.5 cm thick.
- Grill the eggplant slices for about 4-5 minutes on each side until tender and charred.
- While the eggplant is grilling, cook the köfte patties on the grill for about 5-7 minutes on each side, or until they are cooked through and have nice grill marks.
- Warm the pita bread on the grill for about 1 minute on each side.
- To assemble, place a grilled eggplant slice on the pita, add a köfte patty, and top with slices of tomato and cucumber. Drizzle with tahini if desired.
