- Chickpeas (canned, drained) - 200 grams
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Parsley (chopped) - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Tomato paste - 1 tablespoon
- Vegetable broth - 200 ml
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large bowl, combine the ground beef, chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
- Shape the meat mixture into small, oval-shaped koftes (meatballs) and set aside.
- In a baking dish, spread the drained chickpeas evenly across the bottom.
- Place the koftes on top of the chickpeas in the baking dish.
- In a small bowl, mix together the olive oil, tomato paste, and vegetable broth. Pour this mixture evenly over the koftes and chickpeas.
- Drizzle the lemon juice on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the koftes are cooked through and golden brown.
- Serve warm, garnished with extra parsley if desired.
