Ingredients

  • Ground beef - 250 grams
  • Bulgur wheat - 100 grams

  • Parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 250 milliliters
  • Lemon - 1, juiced

Steps

  1. In a bowl, combine ground beef, chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Mix well with your hands until all ingredients are combined.
  2. Form the mixture into small oval-shaped meatballs (about 2.5 cm in length) and set aside.
  3. In a medium pot, bring 250 milliliters of water to a boil. Add bulgur wheat, a pinch of salt, and lemon juice. Stir, cover, and reduce heat to low, cooking for about 15 minutes or until water is absorbed and bulgur is fluffy.
  4. While the bulgur is cooking, heat olive oil in a large skillet over medium heat. Add the köfte and cook for about 4-5 minutes on each side, until browned and cooked through.
  5. Once the bulgur is ready, fluff it with a fork and serve on plates topped with the köfte. Garnish with additional parsley if desired.
