- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 250 milliliters
- Lemon - 1, juiced
Steps
- In a bowl, combine ground beef, chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Mix well with your hands until all ingredients are combined.
- Form the mixture into small oval-shaped meatballs (about 2.5 cm in length) and set aside.
- In a medium pot, bring 250 milliliters of water to a boil. Add bulgur wheat, a pinch of salt, and lemon juice. Stir, cover, and reduce heat to low, cooking for about 15 minutes or until water is absorbed and bulgur is fluffy.
- While the bulgur is cooking, heat olive oil in a large skillet over medium heat. Add the köfte and cook for about 4-5 minutes on each side, until browned and cooked through.
- Once the bulgur is ready, fluff it with a fork and serve on plates topped with the köfte. Garnish with additional parsley if desired.
