Ingredients
- Ground beef (lean) - 200 grams
- Onion (finely chopped) - 1 medium (about 100 grams)
- Garlic (minced) - 2 cloves
- Parsley (chopped) - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Long-grain rice - 150 grams
- Vegetable broth - 300 ml
- Carrot (grated) - 1 medium (about 70 grams)
- Green peas (frozen) - 50 grams
Steps
- In a bowl, combine the ground beef, chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Mix well and form into small meatballs, about 2.5 cm in diameter.
- In a large skillet, heat the olive oil over medium heat. Add the meatballs and cook until they are browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
- In the same skillet, add the grated carrot and sauté for 2-3 minutes until softened. Add the long-grain rice and stir for another minute until the rice is lightly toasted.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid has been absorbed.
- During the last 5 minutes of cooking the rice, add the green peas and the browned meatballs on top. Cover again and let steam until the peas are heated through.
- Fluff the rice with a fork and gently mix in the meatballs and peas before serving.
