Ingredients

  • Ground beef (lean) - 200 grams
  • Onion (finely chopped) - 1 medium (about 100 grams)
  • Garlic (minced) - 2 cloves
  • Parsley (chopped) - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Long-grain rice - 150 grams
  • Vegetable broth - 300 ml
  • Carrot (grated) - 1 medium (about 70 grams)
  • Green peas (frozen) - 50 grams

Steps

  1. In a bowl, combine the ground beef, chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Mix well and form into small meatballs, about 2.5 cm in diameter.
  2. In a large skillet, heat the olive oil over medium heat. Add the meatballs and cook until they are browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
  3. In the same skillet, add the grated carrot and sauté for 2-3 minutes until softened. Add the long-grain rice and stir for another minute until the rice is lightly toasted.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid has been absorbed.
  5. During the last 5 minutes of cooking the rice, add the green peas and the browned meatballs on top. Cover again and let steam until the peas are heated through.
  6. Fluff the rice with a fork and gently mix in the meatballs and peas before serving.
