Ingredients

  • Ground beef - 300 grams
  • Cauliflower - 400 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Egg - 1 large
  • Lemon - 1, for serving

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, combine the ground beef, finely chopped onion, minced garlic, parsley, paprika, cumin, salt, black pepper, and egg. Mix well until combined.
  3. Shape the mixture into small meatballs, about 2-3 cm in diameter.
  4. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the meatballs and cook for about 5-7 minutes, turning occasionally until browned on all sides.
  5. Transfer the meatballs to a baking dish and bake in the preheated oven for 10-15 minutes until fully cooked through.
  6. Meanwhile, prepare the cauliflower rice. Remove the leaves and stem from the cauliflower, then chop it into florets. Pulse in a food processor until it resembles rice grains.
  7. In the same skillet, add the remaining tablespoon of olive oil and sauté the cauliflower rice for about 5-7 minutes over medium heat until tender. Season with salt and pepper to taste.
  8. To serve, place a generous amount of cauliflower rice on each plate and top with the baked meatballs. Squeeze fresh lemon juice over the top before serving.
