Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Sugar - 1 teaspoon
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Red lentils - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chili flakes - 1/2 teaspoon
- Parsley - 2 tablespoons, chopped
- Bell pepper - 1 small, finely chopped
- Zucchini - 1 small, grated
- Lemon - 1, juiced
Steps
- In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover with a towel, and let rise for 30 minutes.
- In the meantime, rinse the red lentils and cook them in a pot with 300 ml of water until tender, about 15-20 minutes. Drain any excess water.
- In a large skillet, heat a tablespoon of olive oil over medium heat. Sauté the onion and garlic until translucent, about 5 minutes.
- Add the cooked lentils, tomato paste, cumin, paprika, black pepper, and chili flakes to the skillet. Mix well and cook for another 5 minutes. Stir in chopped parsley, bell pepper, and grated zucchini. Remove from heat and let cool slightly.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, divide it into two equal portions. Roll each portion into an oval shape on a floured surface.
- Transfer the dough to a baking sheet lined with parchment paper. Spoon the lentil mixture along the center of each oval, leaving a border on the sides.
- Fold the edges of the dough over the filling to create a boat shape. Brush the edges with olive oil.
- Bake in the preheated oven for 15-20 minutes or until the dough is golden brown.
- Remove from the oven, squeeze fresh lemon juice over the top, and serve hot.
