- Red lentils - 100 grams
- Bulghur wheat - 50 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 small, grated
- Fresh parsley - 2 tablespoons, chopped
- Tomato paste - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Potatoes - 300 grams, diced
- Vegetable broth - 400 ml
- Lemon - 1, for serving
Steps
- In a saucepan, combine the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes until the lentils are soft and water is absorbed.
- In a large bowl, combine the cooked lentils, bulghur wheat, chopped onion, minced garlic, grated carrot, parsley, tomato paste, cumin, paprika, salt, and black pepper. Mix well until all ingredients are combined.
- Allow the mixture to cool for a few minutes, then shape it into small patties (about 8-10).
- Preheat the oven to 200°C (390°F). Toss the diced potatoes with olive oil, salt, and pepper, and spread them on a baking sheet. Roast in the oven for about 25 minutes or until golden and crispy.
- While the potatoes are roasting, heat a non-stick skillet over medium heat. Cook the lentil patties for 3-4 minutes on each side until they are golden brown.
- Serve the köfte patties hot alongside the roasted potatoes, garnished with lemon wedges.
