Ingredients

  • Red lentils - 100 grams
  • Bulghur wheat - 50 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 small, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Tomato paste - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Potatoes - 300 grams, diced
  • Vegetable broth - 400 ml
  • Lemon - 1, for serving

Steps

  1. In a saucepan, combine the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes until the lentils are soft and water is absorbed.
  2. In a large bowl, combine the cooked lentils, bulghur wheat, chopped onion, minced garlic, grated carrot, parsley, tomato paste, cumin, paprika, salt, and black pepper. Mix well until all ingredients are combined.
  3. Allow the mixture to cool for a few minutes, then shape it into small patties (about 8-10).
  4. Preheat the oven to 200°C (390°F). Toss the diced potatoes with olive oil, salt, and pepper, and spread them on a baking sheet. Roast in the oven for about 25 minutes or until golden and crispy.
  5. While the potatoes are roasting, heat a non-stick skillet over medium heat. Cook the lentil patties for 3-4 minutes on each side until they are golden brown.
  6. Serve the köfte patties hot alongside the roasted potatoes, garnished with lemon wedges.
